Super Speedy Banana Bread

February 4, 2016 CC

This banana bread is easy to make, incredibly delicious and super healthy. Best thing is that most of the hard work is done by your blender! Great on it’s own as a sustaining breakfast-on-the-go, or with a slather of almond butter. It’s a perfect Winter comfort food for everyone. I find it's  a great lunch box snack that will keep little ones happy, energised and full!

We’ve been eagerly awaiting Ella’s new cookbook ‘Deliciously Ella Every Day by Ella Woodward’ and this is the first recipe were trying out from it.
I had two little helpers who were very keen to get involved - the allure of chocolate cake always works!
I have to say it’s the easiest recipe ever - just 6 ingredients whizzed up in the blender. it did take a bit of time in the blender because the mixture’s very thick, but what could be easier?! It’s sweetened with maple syrup so no refined sugar here, chia seeds and it’s main ingredient is avocados so it’s winning on the health stakes, but it’s still very rich so not one to eat everyday!

Pretty Yummy Pea and Mint Soup

February 1, 2016 SARA JACKSON
Peas please....

Peas please....

It is so vital to eat healthily at this time of year to keep your blood rich, immunity high and bugs at bay. Soups are one of the easiest ways to get your daily veg in one hit and it's just as easy to make a portion for 1 or 10, so it just makes sense to batch cook and freeze individual portions for when you can't be bothered to cook but want something nourishing. Peas are suprisingly high in protein and fibre which makes them great at blood sugar balancing. And they're high in phytonutrients and have even been linked to lowering stomach cancer risk. Who knew they were so good for us? I balance their sweetnes with some cumin...

Your gut guides your overall health - 80% of our body's immunity lies in the lining of the GI Tract so our gut really is the centre of our mental and physical health. Yet it’s extremely common to experience lots of digestive issues that take it's toll on our strength and vitality. If you want better immunity, optimal digestion, improved clarity and balance, you need to work on rebuilding your gut health.

Here are six of my favorite healing tools to repair a leaky gut:

Chickpea and rocket salad bowl

January 31, 2016 SARA JACKSON

Eating a handful of bitters like rocket before any meal is the easiest way to kickstart your digestion getting the enzymes going. So not only is this a super quick salad, it's doing wonders for your liver, digestion and for keeping you feel fuller for longer with the greens, lemon, protein and fibre. And you can whip it up in a few minutes at home & take with with you to work for lunch - just hold off on the lemon until serving to keep it nice and crispy.
